Combine ingredients, except sparkling water, in a cocktail shaker with ice and shake. Strain into a chilled Collins glass over ice. Top up with sparkling water and STIR. Garnish with a lemon or lime twist. *Simple syrup can be made by adding equal parts sugar and boiling water.
