Zucchini Cake *Food Recipe*
Ingredients

2 1/4 cup all-purpose flour

2 1/4 cup white sugar

3/4 teaspoon sea salt

1 teaspoon baking soda

3/4 teaspoon baking powder

1 3/4 teaspoon ground cinnamon

3/4 teaspoon vanilla extratct

3 whole eggs

3/4 cup vegetable oil

2 1/4 cup grated zucchini

8 ounce cream cheese

1/2 cup butter
-
2 cup confectioners sugar
-
2 teaspoon vanilla extract
Directions
- Preheat oven to 325 degrees F. Lightly grease and flour a 9 x 11 cake pan.
- In a medium sized bowl, combine the flour, baking soda, baking powder, cinnamon, white sugar and salt. Mix well.
- In another bowl, beat the eggs, vegetable oil and 3/4 teaspoon vanilla extract together.
- Pour the egg mixture into the flour mixture and mix well.
- Stir in shredded zucchini and mix well.
- Pour batter into prepared pan.
- Bake at 325 degrees F for 35-40 minutes until a toothpick inserted into the center of the cake comes out clean. Allow cakes to cool in pans.
To make frosting:
- Cream together the cream cheese and butter.
- Add the confectioners sugar a little at a time, mixing well.
- Add 2 teaspoons vanilla and spread on your cake.
