- 1 ounce Gold Rum
- 1/2 ounce Strega
- 1 ounce pineapple juice
- 2 tsp lime juice
- 2 tsp simple syrup
Combine ingredients, except Champagne, in a cocktail shaker with ice and shake. Pour into a chilled Collins glass.
Top up with Champagne and STIR. Garnish with a lime wedge and cherry.
*Strega is an Italian herbal liqueur. Its yellow color comes from the presence of saffron in its recipe.
**Simple syrup can be made by adding equal parts sugar and boiling water.
