Spiked Watermelon Balls


  • 1/3 cup water
  • 1/3 cup sugar
  • 1/2 cup Coconut Rum
  • 1/3 cup lime juice
  • 1 tsp lime zest
  • 2 cups watermelon balls


Boil water.  Stir in sugar and simmer for 3 minutes.  Add rum and simmer another 2 minutes.  Remove from heat and let cool before adding lime juice and lime zest.

Using a melon baller, shape watermelon into balls.  Pour mixture on top, cover and refrigerate for several hours.
