- 2 ounce Gin
- 1/2 ounce lemon juice
- 1/2 simple syrup
- ginger ale
- 1/4 cucumber
- 16 mint leaves
Peel and dice cucumber. In a shaker add cucumber and mint leaves, muddle* together. Fill shaker with ice , add Gin, lemon juice and simple syrup**.
Shake and strain into a Collins glass filled with ice. Top with ginger ale and garnish with a mint sprig and cucumber slice.
*Muddle is using a special tool to mash the ingredients together, can also be done with the back of a spoon.
**Simple syrup can be made by adding equal parts sugar and boiling water.
